Mac and cheese
This classic side dish has been around probably since the discovery of fire. First the wheel followed by fire and capped off with some cheese covered elbow noodles. Done right, Mac and cheese. I just love smoked cheese, makes my mouth water just thinking about it. Now that Summer is drawing in it’s time to plan this year’s greatest hits.
Now I’m gonna let you all in on a secret, Rachael hates Mac and cheese. I know! It’s blasphemy! Something is definitely wrong with the chemical composition of her brain. I am honestly not even sure if she likes this Mac and cheese or not. All other taster love the cheesy goodness though.
Anyway this recipe I make in the smoker, but can also be made in a conventional oven.
Having a complex flavor profile is key to a Mac and cheese. Don’t get me wrong nothing wrong with American or sharp cheddar. Cheese is….. just awesome and mixing it is like duh! Complex might sound daunting for some, no worries though! Being a father, working two jobs, trying to help around the house, and life itself. This isn’t anything you can’t pick up at your favorite grocery store. Mine happens to Target!
I came up with this a few years back and have been working on finding a blend that I like, that also wasn’t overly cheesy. Yes, I found the level of too much cheese, well more like I created a Mac and cheese loaf. Anyways… This time I used a blend of Chipotle cheddar, monterey jack, mild cheddar cubes, and a bag of Mac and cheese blend. I found that this combo creates a creamy, and rich taste and texture. Plus throwing it in my masterbuilt electric smoker adds that next level of flavor with some hickory wood smoke. If you don’t have a smoker this is just pop that baby in the oven and enjoy the flavor. My favorite part is once it’s all gooey and formed, you top it with more cheese and broil it until Golden and crispy goodness.

List of goodies
1 8oz bag Mac and Cheese shredded cheese blend
2oz Monterey Jack cheese shredded
2oz Chipotle cheddar shredded
**This two I had to get 8oz block and shred them myself.
4oz Mild Cheddar Cubes
16oz box of elbow macaroni
3 cups Milk
2 cups Heavy whipping cream
½ stick melted butter.
Pour dry noodles into a 9×13 pan.
Shred the 2oz portions of Chipotle cheddar and monterey jack.
Combine all cheese into a bowl, mix well.
Pour over noodles
Add milk, heavy whipping cream over the cheeses.
Add melted butter
Stir until well combined
***** If using a smoker******
Place into a preheat smoker at 250 degrees. Cook for two hours. Top with a hand full or two of mild cheddar and place under a broiler for 3-5 minutes.
******** Oven *********
>Cook noodles and drain according to package before preparing.
Place into a preheated oven 350 degrees. Bake for 35-40 minutes or until thicken. Top with a hand full or two of mild cheddar and place under a broiler for 3-5 minutes.
