Mini CheeseCakes!

Desserts are my Kryptonite. I have a major sweet tooth, we have to either not have treats in the house or hide them. After 9pm that sugar loving tooth takes over. I have been known to eat a fourth of a cheesecake at a time. Or a whole container of cookies. Reasons why I’m fat. These not on feed that sweet tooth, but can be hidden when need be.

What I enjoy about cheese cake is the the simplicity of it’s core. Cream cheese and graham crackers, boom done. These only add to it, giving that velvety texture in just a few bites. Plus, the size of these reduce your chances for imperfect bites! I love make cheesecake for these reasons and that it’s one of Rachael’s favorite desserts too. The minis allow for me to control my urge and feed my company without worrying about running out. I like mine all natural, but if you want to use fruit or a Caramel sauce to top it off, then do it.

Ingredients

Crust

1 Cup Crushed Graham Crackers

4 Tsp Melted Butter

2 Tbsp of White Sugar

Filling

2 8oz blocks if cream cheese

½ Cup Sour Cream

¼ Cup White Sugar

2 Eggs

1Tsp Vanilla Extract

Instructions

Crust

  1. Preheat oven to 325 degrees.

  2. Crush one cups worth of Graham Crackers.

  3. Combine crushed Graham Crackers, melted up and sugar.

  4. Stir to combine.

  5. Using a spoon pour one scoop into a cupcake pan lined with cupcake cake cups.

  6. Do this in each one until evenly distributed in all 12 cups.

  7. Bake for 6 to 8 minutes, or until golden brown.

Filling

  1. In a stand mixture start beating the cream cheese with paddle attachment.

  2. Mix in sour cream, sugar, eggs, and vanilla.

  3. Be sure to stop and scrape the sides of the bowl, and bottom.

  4. Continue to mix until all combine and mixture is smooth.

  5. Once Graham Cracker crust are done and completely cooled, spoon mixture into cups. I did a heaping tablespoon in each then leveled all them off with remaining batter.

  6. Bake for 20 to 22 minutes. Remember if they’re cracked, they’re over cooked!

  7. Let cool or refrigerate and enjoy.
