My wife loves all things pumpkin. Pumpkin cookies, pumpkin pie, pumpkin you name it. I am pretty sure that if she could put pumpkin spice in her hands and high five people so it poofs up like fairy dust she probably would. My son is following in those foot steps. With the world of pumpkin spice set to do over half a billion in sales this season(2017). Those two are not alone in their pumpkin love.
As soon as pumpkin spice hits stores, the pumpkin puree makes its appearance in my house. By the time October is over I never want to taste pumpkin again. With their love of pumpkin, I have been trying to make different foods with pumpkin. A few years back I was given a waffle iron for Christmas and use whenever I can. Come on, who doesn’t like a waffle, or waffle shaped things?!?!
During October we try to go to the pumpkin patch. Here in the Nebraska the popular patch is Vala’s. They’re busy, almost always. This is why we try to go during the school week. You know, less people more enjoyment. On this morning I wanted to make a special breakfast for them. Homemade is best but, sometimes you just have time for that. Enter box pumpkin waffles! These are easy, filling, and kids love them! Please enjoy!
1 can Pumpkin puree
2.5 Cups pancake/waffle mix
1 Cup Milk
3 Tbsp Brown sugar
2 Tsp Pumpkin spice
Mix all ingredients into large bowl
Heat up waffle Iron to medium low
Spray waffle iron with nonstick spray
Cook until notified if your waffle iron is like mine. If not, cook until the outer is a soft crisp, and inside is like a pancake.
