Green bean casserole is a holiday favorite in my house. It is so simple and basic, but that’s what makes it so good. I know as a child I was always mystified at how it became so epically mesmerizing. Oh, that lovely time in life before you make it to big kid table! I know growing up, my grandma loved it when my brother and I came to help the night before.
I never understood the how or why when we would help. I remember going to help one year, and realizing how easy our holiday staples were to make. That when I started to understand that it wasn’t about the help, it was about the moments – which is what cooking and Holidays should be about. I know that as I make my holiday sides I always ask for Atticus’s help, not because it’s helpful, or that I need it. Spending time with my family, creating moments. This outweighs any tiff, struggle, or issues that might be faced. Giving my children those memories they will want to share with their families brings me a lifetime of joy.
2 14.5oz cans of green beans
1 can of Cream of Mushroom soup
4oz Bella Mushrooms, sauteed and diced
1 can Fried Onions
½ cup Heavy Whipping Cream
1 Tsp Olive oil
Sautee mushrooms in a medium sauce pan with olive oil until soft, and dice.
Preheat oven to 350 degrees
Put mushrooms, cream, and soup the bottom of a 9×13 and mix.
Stir in drained green beans and combine
Cook for 25 minutes, Then remove and add half the fried onions to the mixture, and top with the rest.
Return to the over for 6 minutes
